Receiving Inspecting:

Choose small- to medium-size beets with firm, smooth skins and purple-red color. Tops should be clean, fresh, and tender. Avoid beets that are shriveled, soft, or have rough skins.

Troubleshooting:

Beets may begin to sprout or decay if stored at high temperatures. Low air circulation may also promote decay; be sure to maintain adequate air circulation during storage. Bunched beets are more perishable than topped beets.

Wilting may result if beets are stored in areas with low humidity.

A rough, woody texture can indicate age. For best quality, choose small- to medium-sized beets with tender, fresh green tops. Small size usually indicates younger, more tender beets.

Usage Ideas:

  • Arrange grated red and gold beets, chopped hard-boiled egg, chopped grilled chicken, and crumbled bacon in rows atop chopped green leaf lettuce; serve with creamy blue cheese dressing.
  • Roast baby beets until tender; peel and dice; drizzle with pomegranate molasses, then serve with steak or lamb.
