Choose beans that are firm, very thin, and well-colored. Avoid spongy beans.

Troubleshooting:

Russeting can indicate chill injury. Store properly.

Yellowing may result if beans are exposed to ethylene gas. Store away from ethylene-producing fruits and ripening rooms.

Usage Ideas:

  • Stir-fry Chinese long beans and Shiitake mushrooms until browned; add chili sauce and crushed peanuts; serve with white rice.
  • Coat Chinese long beans in tempura batter; lightly fry and serve with soy-ginger dipping sauce.
