Receiving Inspecting:

Eggplants should be firm and light for their size. Look for skin that is even-colored and free of blemishes. Avoid eggplants with soft spots or those that are flabby or shriveled.

Storage Handling:
 

Short-term storage recommendation (7 days or less)

  • 45-50° F/7-10° C
  • 90-95% relative humidity
Shelf-Life:
7 to 14 days.
Troubleshooting:

Yellowish-brown skin discoloration and increased decay are indications of chill injury. Shriveled or flabby skin can result if stored in an area with low humidity. Store properly.

Pulp and seed discoloration, decay, and loss of calyx can occur if eggplants are exposed to ethylene gas. Keep away from ethylene-producing fruits and ripening rooms.

Rough handling may result in bruising; handle with care.

Usage Ideas:

  • Roast eggplant rounds slathered with red miso paste; serve grilled sea bass on top.
  • Stir-fry horizontally-sliced Japanese eggplants in spicy sesame-soy sauce; serve with white rice and sautéed scallops.
