Rio Valley Onions, Owner/Farmer
Joe Paul Lack
“I was born and raised in the Hatch Valley, also known as the Chile Capital of the World. Growing up in a farming community, I was blessed to have worked with many area growers who encouraged me to seek a degree in Agriculture Education. Upon graduation, I went to work as an entomologist and ag consultant, which brought such valued experience. I married a farm girl, and we started farming in 1980. We worked side by side, with our three daughters, growing, packing, and shipping safe, high-quality produce across the country. In fact, the produce label on our onion bag was, “My Three Queens.” Our blessings continue as we are now working side by side with the next generation. As Stewards of the Land, we understand and value the use of God’s natural resources. With healthy cultivation practices, we hope to be able to pass these resources to the next generation.”
“As a young child, my grandmother had a garden in our backyard and while she was cooking, she would ask me to go pick jalapenos, tomatoes, and squash. That garden made a big impression on me and my life. I believe that is where my passion for food and fellowship developed. On Sundays our family would gather at my grandparents’ home to eat and laugh. I believe that no matter what happens in life there is no better feeling than gathering around the dinner table with your family and friends.”
