“In 40+ years I’ve spent in the foodservice industry, I’ve never had such an awesome experience as when I stepped off the Markon tour bus in the fennel fields of Salinas. I was raised in a large family where my mom cooked all meals from scratch. I loved helping in the kitchen while I was growing up. My father, Joe Colombo, Italian, loved his fennel thinly shaved in his salad. Sadly, he passed away just five days before my Markon trip. So, I found it very fitting to conceive a potential new Ready-Set-Serve vegetable blend in his honor: Papa Joe’s Fennel Blend."
